Breakfast Review Friday VI

First off let me tell you all how COLD it is here! According to channel 6 this is the coldest is has been in a few years. We are at 13 this morning, but with the wind chill factor they say it feels like –10. I feel so bad for all the poor animals out in this. I hope they all find a warm spot to hunker down and snuggle!

Okay it’s that time again!


Since I have been trying out the Trim Healthy Mama book (I think I’m about a 5th of the way through – small victory!) I thought I would share a recipe that they have in the book! So far I am loving all the recipes I’ve made, mostly dinner ones so far. They have been very easy and fast – double bonus since evenings are still when Tyrion gets a little cranky and wants more attention. I usually do dinner prep while he takes his last nap of the day so it’s easy to throw together before Travis gets home!

Today I tried Light Baked Custard (pg. 218), which for those following the plan, is a S, E or Fuel Pull meal. I didn’t have the exact ingredients so I improvised a bit. I also halved the batch since I was the only one partaking this morning.

In a blender add:

  • 7 egg whites (I used two – so I guess I thirded it????)
  • add 2 cups unsweetened almond milk (I used 3/4th cup 2% organic regular milk)
  • add 7 tsp. Truvia and 2 tsp. vanilla (I used 1 Tbs. honey and 1 tsp. vanilla)
  • Blend all ingredients well.
  • Pour into a lightly greased small baking dish or 4 ramekins and bake for 1 hour at 350.

They said that you can add more vanilla if you want, or try spices like cinnamon or pumpkin pie spice. I added about a half teaspoon of cinnamon on mine after taking the photo below.


So how did it taste?


Really good! The texture was between custard and kind of a cottage cheese consistency. But I love cottage cheese so it’s all good! It was sweet, though I think next time I will blend the cinnamon in instead of sprinkle it on top. When just left on top it formed a crust and didn’t mix into the custard which would have been better.

I will totally be making this again as it’s super easy! The hour bake time actually works great for me because Tyrion is such a happy camper in the mornings, that I normally leave him playing in bed for a bit after he wakes up and that gives me a chance to get the day started. You know, the coffee pot going, feed the dog, and pack Travis’s lunch. For that reason, whipping this up and throwing it in the oven would be easy. Then it would be ready just about the time I finish getting Tyrion clean and dressed for the day and have a small feeding session or play time.

Speaking of the little guy, he’s getting hungry so off to take care of that. I think today we will stay home and try to get some more stuff done around the house. I was very productive yesterday and hope the momentum continues into today!
