Quick Energy Bites

Yesterday was meal prep Sunday, and the last thing I whipped together was Energy Bites. I was tired and almost didn’t make them, but I’m so glad I did. They were easy to put together and before I knew it I was sitting on the couch with a glass of red wine in my hand.



1 cup old fashioned oats
1/2 cup raisins
1/2 cup Medjool Dates (make sure pits are removed)
1 tsp. Vanilla
2 Tbs. peanut butter
Sprinkle of Cinnamon
1 Tbsp. water or more If needed

Process all ingredients in a food processor and roll onto balls. Makes about 12. Place in refrigerator until firm. Snack on as needed!

Tyrion loved these too, and whenever he eats something new we consider it a win in our house!
